The Cellar Shot

  • Adrien Renoir ‘Le Terrior’ Extra Brut Grand Cru NV, Champagne, France - Equal parts Chardonnay and Pinot Noir from 40 year old vines in the Grand Cru village of Verzy. Bouquet of Meyer lemon, pastry cream, pear, and shortbread. Full-bodied with an elegant pinpoint mousse. Adrien is an emerging young talent in the region!
  • Venn Cabernet Franc 2020, Napa Valley - From the Young Inglewood Vineyard in St. Helena. A splash of Cabernet Sauvignon for balance. This is fresh and lively. Think ripe berries, savory notes, and structure on the palate. With floral elements, cool fruits, mint & tea leaves, and a hint of cocoa. Modeled after a Chinon from a benchland renowned for world class bordeaux varietals.

The Trust Fall

  • Dos Habibis ‘Pearly White’ Chenin Blanc 2024, Clarksburg - Direct press Chenin Blanc which was fermented and aged in stainless steel. Gravely and sedimentary soils make for great drainage resulting in a restrained version of Chenin Blanc with vivid acidity.
  • Augur ‘Foreshadow’ Ramato Pinot Gris 2020, San Benito County - Ramato = Italian style orange wine. Notes of pear, soft lemon and orange with hints of spice. Great minerality. Citrusy with a rich texture. This has only gotten better with age.
  • Il Censo ‘700’ Nero d’Avola 2018, Sicily, Italy - Collaboration with Giampero Bea (a.k.a Paolo Bea). Vineyard at 700 meters above sea level resulting is a natural wine which offers a combo of plushness and tension. Fruits in the dark-red part of the spectrum with plenty of energy.

The Pop & Pour

  • LIWA Grüner Veltliner 2022, Monterey County - A crisp, organic white wine known for its zesty citrus (lime, pear) and white pepper notes, bright acidity, and minerality. Made in a natural style with skin contact, resulting in a vibrant, light-bodied, and refreshing wine.
  • Dos Habibis ‘Every Thorn’ Rosé of Barbera 2024, Mendocino County - From the Leventis Vineyard planted exclusively to Barbera. Organic practicing and tucked into the hillside just below Lake Mendocino in Eastern Ukiah. Surrounded by bay laurel and eucalyptus trees, the perimeter creates an amphitheater with shade from leaves and branches creating coolness on the vines to retain bright acidity.
  • Bodegas Mustiguillo Mestizaje Tinto 2022, Valencia, Spain - A blend of Bobal and Grenache. Deep in color with an intriguing nose of black fruits, violets, cedar and black pepper. The fleshy dark fruit flavors of blackberry and black currant are lifted by brink mineral acidity and fine tannins. Leaves you on a nice sweet and spicy finish.
